| lbs | Chicken breasts, skinned | | | -boned | | 1/2
| cup | Plain nonfat yogurt | | 1/2
| tsp | Dried leaf tarragon | | | Paprika | | 11
| oz | Mandarin orange slices | | | -drained |

Procedures:
| 1 | Preheat oven to 350°F (175 c). | | 2 | Spray a shallow 2-quart baking dish with vegetable cooking spray. | | 3 | Spread rice evenly over bottom of dish. | | 4 | Combine chicken broth, orange juice, currants, and pistachios. | | 5 | Pour over rice. | | 6 | Place chicken breasts on top. | | 7 | Brush chicken with yogurt. | | 8 | Sprinkle with tarragon and paprika. | | 9 | Cover and bake about 30 minutes; uncover, add oranges and continue baking about 15 minutes until chicken is done. |
