Indian anything curry

Ingredients:
3 tbspUnsalted butter
-(or veg. oil)
1 cupChopped onion
1 tspMinced garlic
1/2 cupFinely minced celery, optl
1 cupTart apple, peel, core and
-cut into small cubes
1/4 cupFlour
2 tbspCurry powder
3/4 tspDry mustard
1 Bay leaf
2 1/2 cupUnsalted broth
3 cupCooked chicken or any
-other meat cut to
-bite-size pieces
-(or possibly cubed tofu)
1/2 cupMilk or cream
3 tbspUnsalted chutney, fine chop
Procedures:
1Melt butter in saucepan and add onion, garlic, celery, and apple.
2Cook, stirring often, for about 5 minutes.
3Blend flour, curry powder and mustard and sprinkle over vegetables, stirring.
4Add bay leaf.
5Add broth, stirring rapidly with wire whisk.
6When mixture has thickened, let it simmer for 15 minutes.
7Stir often from the bottom to prevent sticking.
8Add meat, milk and chutney and simmer for 4 or 5 minutes longer.
9Serve with rice, additional chutney on the side, peanuts or other kinds of nuts, and any number of indian relishes and raitas.
