Ingredients:
2 tspOlive oil, divided
1 lbsItalian turkey sausage
1 Egg, beaten (or substitute)
1 Lemon peel, grated
6 tbspItalian bread crumbs
2 cupPlain tomato sauce
3 Basil leaves, chopped
1 pinchFresh minced oregano
4 slicePart-skim mozzarella cheese
Procedures:
1Spray large non-stick skillet with cooking spray and add 1 teaspoon of the olive oil.
2Combine turkey sausage with egg and lemon peel; mix lightly.
3Sprinkle bread crumbs on shallow plate.
4Shape ?of meat mixture into flat patty and press into crumbs, lightly coating both sides.
5Make 3 more coated patties with remaining meat and crumbs.
6Brown patties in skillet over moderate heat, for about 2 to 3 minutes.
7Add remaining teaspoon of oil and turn to brown other side evenly.
8Mix tomato sauce with herbs.
9Top each with sauce and a slice of mozzarella.
