| oz | Onions | | | Olive oil | | | Italian white wine | | 8
| oz | Fresh Mushrooms | | 3
| med | Tomatoes | | | Salt & Pepper to taste | | | Parsley, chopped | | 3

Procedures:
| 1 | Peel onions and cut into thin rings. | | 2 | Grease a casserole dish with oliveoil. | | 3 | Fry the onions in it till they are golden brown. | | 4 | Skin and debone the chicken, cut the meat in pieces and brown with the mushrooms in casserole. | | 5 | Pour white wine over all, till covered. | | 6 | Peel tomatoes and cut into 8 pieces each,season with fresh ground pepper. | | 7 | Peel and cut potatoes in 8 pieces each and add to the casserole. | | 8 | Let it simmer, over medium heat for about 30 minutes. | | 9 | Garnish with fresh chopped parsley. |
