Ingredients:
1 tspCornstarch
1 tspSugar
1/2 tspGround nutmeg
1/8 tspGround red pepper
1/2 cupLow-sugar orange marmalade
1/2 cupFresh lime juice
1 tspPeeled minced ginger root
Vegetable cooking spray
1 tbspMargarine
6 Boneless skinless chicken
-breast halves
1/4 tspSalt
6 cupHot cooked rice
Cooked without salt or fat
3 cupPeeled coarsely chopped
-ripe papaya
Fresh cilantro springs
-(optional)
Procedures:
1Recipe by: cooking light, may 1994, page 151 preparation time: 0:09 combine first 7 ingredients in a small saucepan; stir well.
2Bring marmalade
3coat a large non stick skillet with cooking spray.
4Add margarine, and place
5spoon 1 cup rice onto each of 6 serving plates.
6Place 1 chicken breast half
