Ingredients:
1 x4-5 lb Chicken
1/4 cupOlive Oil
1 cupTomatoes, chopped
1/2 cupOnion, chopped
1/2 cupGreen Pepper, chopped
1 clGarlic, minced
2 xBay Leaves
1 pinchOregano
2 tspSalt
1/2 tspPepper
2 tbspSalad Oil
1 cupRice (uncooked)
1 cupRipe Olives, coarsley choppd
1/4 cupPimentos, chopped
1 cupPeas, cooked and drained
Procedures:
11) brown chicken in oil in a large skillet or dutch oven.
2Add tomatoes, onion, green pepper, garlic and seasoning.
3Simmer for about 5 minutes.
42) pour into a large casserole.
5Heat oil in same skillet.
6Add rice and stir until rice is golden brown.
7Add to the chicken.
83) cover with water and bake in a 350°F oven for approximately 1 ?hours or until chicken is tender and the rice is cooked.
94) add the olives, pimentos and peas.
10Bake 15 minutes more and serve
