Ingredients:

| x | 4-5 lb Chicken | | 1/4
| cup | Olive Oil | | 1
| cup | Tomatoes, chopped | | 1/2
| cup | Onion, chopped | | 1/2
| cup | Green Pepper, chopped | | 1
| cl | Garlic, minced | | 2
| x | Bay Leaves | | 1
| pinch | Oregano | | 2
| tsp | Salt | | 1/2
| tsp | Pepper | | 2
| tbsp | Salad Oil | | 1
| cup | Rice (uncooked) | | 1
| cup | Ripe Olives, coarsley choppd | | 1/4
| cup | Pimentos, chopped | | 1
| cup | Peas, cooked and drained |

Procedures:
| 1 | 1) brown chicken in oil in a large skillet or dutch oven. | | 2 | Add tomatoes, onion, green pepper, garlic and seasoning. | | 3 | Simmer for about 5 minutes. | | 4 | 2) pour into a large casserole. | | 5 | Heat oil in same skillet. | | 6 | Add rice and stir until rice is golden brown. | | 7 | Add to the chicken. | | 8 | 3) cover with water and bake in a 350°F oven for approximately 1 ?hours or until chicken is tender and the rice is cooked. | | 9 | 4) add the olives, pimentos and peas. | | 10 | Bake 15 minutes more and serve |
