Ingredients:

| cup | Chopped onion | | 1
| | Clove garlic, crushed | | 2
| tbsp | Flour | | 2 1/4
| cup | Chicken broth | | 1/4
| tsp | Sugar | | | Black pepper to taste | | 1
| | Med. Bell pepper, diced | | 3
| tbsp | Oil | | 1
| can | Tomato paste ( 6 oz.) | | 1/2
| tsp | Salt | | 1/4
| tsp | Tabasco sauce (or to taste) | | 2
| cup | Cooked, cubed, chicken |

Procedures:
| 1 | Saute onion, green pepper and garlic in oil until tneder, stirring occasionally. | | 2 | Add flour, stir just until flour starts to brown. | | 3 | Stir in tomato paste, broth, salt, sugar and tabasco sauce. | | 4 | Cook and stir until mixture comes to boil and thickenes. | | 5 | Stir in chicken and black pepper. | | 6 | Simmer uncovered 5 minutes or until chicken in heated through. | | 7 | Serve over hot cooked rice. | | 8 | M.c.--metairie, la. | | 9 | Courtesy telephone pioneers billspalding *p crbr 38 a |
