Festive apple chicken

Ingredients:
4 1/2 lbsChicken
Oil
1/2 ozButter
3 tspRedcurrant jelly
Fresh Parsley to Garnish
FOR THE STUFFING
1/2 ozButter
1 smallOnion, Peeled, Finely Chopped
2 ozMushrooms, Finely Chopped
2 ozSmoked Ham, Finely Chopped
1 ozFresh White Breadcrumbs
3 tspChopped Fresh Parsley
3 Eating Apples
3 tspLemon Juice
Salt and Black Pepper
Procedures:
1Preheat oven to 190c, 375°F, gas mark 5.
2to make stuffing, melt butter in a pan and fry onion gently, until softened, but not browned.
3Stir in mushrooms and cook or 2 to 3 minutes.
4Remove pan from heat and stir in ham, breadcrumbs and parsley.
5Core one apple and grate coarsely.
6Stir into stuffing mixture and add lemon juice.
7Season to taste.
8loosen breast skin of chicken and spoon stuffing mixture underneath, smoothing down evenly.
9place chicken in a roasting tin and brush lightly with oil.
10Roast bird for about 1 and a half hours, or until juices run clear when pierced through breast.
11If chicken begins to overbrown, cover with foil.
12core and slice remaining apples and saute in butter until golden.
13Stir in redcurrant jelly until melted.
14Garnish chicken with apple mixture and parsley.
