Ingredients:

| pack | Skinless boneless chicken | | | Breast | | 1 1/2
| tbsp | Vegetable oil | | 1/4
| cup | Flour, all-purpose -- | | | Unbleached | | 1
| each | Orange -- grated zest only | | 1/3
| cup | Orange juice, frozen | | | Concentrate | | 2
| tbsp | Water | | 8
| | Halves | | 1/2
| cup | Mandarin oranges -- drained | | 2
| tsp | Fresh parsley -- minced | | | Apricots, dried |

Procedures:
| 1 | Oil a large non-stick skillet. | | 2 | Dredge chicken in flour and place in skillet, over medium heat. | | 3 | Add orange zest. | | 4 | Turn chicken to lightly sear all sides. | | 5 | Add apricot pieces, then orange juice concentrate and water. | | 6 | Cover and simmer over medium-low heat for 15-20 minutes. | | 7 | Remove chicken to a serving platter. | | 8 | Stir pan juices, and if too thick, add 1-3 teaspoons water. | | 9 | Spoon juices over chichen. | | 10 | Garnish with orange sections and sprinkle with parsley |
