Florida chicken breasts

Ingredients:
1 packSkinless boneless chicken
Breast
1 1/2 tbspVegetable oil
1/4 cupFlour, all-purpose --
Unbleached
1 eachOrange -- grated zest only
1/3 cupOrange juice, frozen
Concentrate
2 tbspWater
8 Halves
1/2 cupMandarin oranges -- drained
2 tspFresh parsley -- minced
Apricots, dried
Procedures:
1Oil a large non-stick skillet.
2Dredge chicken in flour and place in skillet, over medium heat.
3Add orange zest.
4Turn chicken to lightly sear all sides.
5Add apricot pieces, then orange juice concentrate and water.
6Cover and simmer over medium-low heat for 15-20 minutes.
7Remove chicken to a serving platter.
8Stir pan juices, and if too thick, add 1-3 teaspoons water.
9Spoon juices over chichen.
10Garnish with orange sections and sprinkle with parsley
