Gladys' finger-lickin' fried chicken

Ingredients:
2 1/2 lbsFryer, cut into 8 pieces
1 cupFlour
1 tbspSalt
-(sounds like a lot but
- it's key to the taste)
1 tspFreshly ground pepper
Vegetable oil
- to 1 ?in depth
- (Gladys prefers corn
- or peanut oils)
Procedures:
1Wash fryer pieces; pat dry with paper towels.
2Combine flour, salt and pepper in large plastic bag.
3Shake pieces to coat well.
4Heat oil in large 12-inch skillet over medium-high heat.
5When hot, add chicken pieces, being careful not to crowd pan.
6(it may be necessary to cook chicken in batches).
7Decrease heat to medium.
8Cook, uncovered, until well browned on underside, about 15 minutes.
9Use tongs to turn.
10Cook, uncovered, until browned on underside, about 12-15 minutes.
11Transfer chicken to double-thickness of paper towels to blot excess fat.
