Ingredients:
1 Chicken, in pieces [3 lb]
1/4 cupSoy sauce, low-sodium
2 tbspLemon juice
1 tbspVegetable oil
1/2 tspLemon pepper
1/2 tspGround ginger
1 Garlic clove, minced
1 cupLong-grain rice
Grated lemon rind
Procedures:
1Remove skin from chicken pieces; place chicken in shallow dish.
2Combine soy sauce, lemon juice, oil, lemon pepper, ginger, 1 cup water and garlic; pour over chicken.
3Cover and refrigerate for at least 8 hours or up to 24 hours turning occasionally.
4Sprinkle rice evenly in bottom of 12-cup greased casserole; arrange chicken pieces over rice.
5Pour in marinade.
6Cover and bake in 325f 160c oven for 40 minutes.
7Uncover; bake for 30-40 minutes or until chicken is no longer pink inside.
8Garnish with lemon rind.
9You can substitute 2 lb chicken legs for the chicken; bake in a 13x9-inch baking dish.
10Lemon pepper can be found in most spice sections of supermarkets.
