Skinny french fried potatoes

Ingredients:
4 eachBAKING POTATOES
1 dashSALT
Procedures:
1Pare potatoes and cut them into ?inch strips.
2Soak the strips in iced water for at least 30 minutes.
3Drain and dry thoroughly.
4In a skillet or deep frier, heat oil to 350 deg f.
5Fry potatoes for about 2 minutes.
6Fry only about one cup at a time, do not over crowd in the oil.
7Use a slotted spoon or frier basket to remove them quickly.
8Drain on paper toweling.
9Allow potatoes to cool at least 10 minutes.
10Raise the temperature in the pan to 375 deg f.
11Fry potatoes for about two more minutes or until golden brown.
12Drain on paper towling in a bowl and salt to taste.
13Serve immediately.
