Ingredients:
2 cupTomatoes
--(peeled, seeded & chopped)
1/4 cupChopped fresh parsley
2 tbspShredded fresh basil
1 1/2 tspMinced garlic
1 1/2 tbspFresh lemon juice
1 1/2 tspOlive oil
1/2 tspFresh mint
1/2 tspPepper
1/4 tspCrushed red pepper
1/8 tspSalt
8 ozRigatoni pasta, uncooked
Fresh basil sprigs (opt.)
Procedures:
1Combine the first ten ingredients in a bowl.
2Let stand at room temperature for an hour.
3Cook the pasta according to the package directions, omitting any salt and fat; drain.
4Add the pasta to the tomato mixture and toss well.
5Garnish with fresh basil sprigs, if desired.
6Serve immediately.
