Ingredients:

| tbsp | Vegetable oil | | 1
| slice | Bacon, cut into? peices | | 2
| lbs | Lean stewing beefcubed 1 ?/td> | | 1
| large | Onion chopped | | 2
| tbsp | Flour | | 2
| each | Carrots, sliced | | 12
| small | White onions, peeled | | 1 1/2
| cup | Beef stock | | 6 1/2
| oz | Guiness beer | | 2
| tbsp | Dark brown sugar | | 2
| tbsp | Red wine vinegar | | 1
| | Bouquet garni | | | Coarse salt | | | Pepper |

Procedures:
| 1 | Preheat oven to 350 degrees. | | 2 | Heat oil in a heavy casserole which will fit into the oven and go on top of the stove, add the bacon. | | 3 | Fry until browned, drain the bacon on paper towels. | | 4 | Dry the cubes of beef with paper towels. | | 5 | Brown in the bacon drippings, remove the beef. | | 6 | Add the chopped onions, brown lightly. | | 7 | Stir in the flour, cook for 2-3 min.- do not let the flour burn. | | 8 | Return the beef, along with its juices to the casserole. | | 9 | Add the bacon, carrots, white onions, stock, guiness, sugar, vinegar, bouquet, salt & pepper. | | 10 | Bring to a boil. | | 11 | Cover. | | 12 | Bake 1 ? 2 hours, stirring occasionally. | | 13 | Serve warm |
