Ingredients:
1/2 tspOlive oil
1 lbsTurkey light meat, skinless
Cooked
1/2 cupOnions -- chopped
1/2 cupBell peppers -- chopped
1/2 cupCelery -- sliced
14 1/2 ozCrushed tomatoes
15 ozDark red kidney beans --
Undrained
8 ozNo-salt-added tomato sauce
1/4 cupWater
2 tspChili powder
1 cupLong-grain rice
1 tspSalt
3/4 cupLow-fat Monterey Jack cheese
Grated
Procedures:
1In a skillet, heat oil over medium heat.
2Add turkey, onions, bell peppers, and celery.
3Cook until turkey is done and vegetables are tender.
4Stir in crushed tomatoes, kidney beans, tomato sauce, water, chili powder, and salt.
5Bring to a boil.
6Stir in rice.
7Cover and reduce heat.
8Simmer, stirring occasionally, 10 minutes or until rice is done.
9Sprinkle cheese on top.
