Ingredients:
2 medBaking potatoes (about 6
-ounces each)
1/2 cupPlain nonfat yogurt
2 tbspChopped onion
1/4 tspSalt
1/8 tspPepper
1 cupHot cooked chopped
-broccoli
1 tbspChopped pimentos
Procedures:
1Nonfat yogurt instead of sour cream makes this twice baked potato a dream come true.
2heat oven to 375!.
3Prick potatoes with fork.
4Bake i hour to i hour 15 minutes or until tender.
5Cool slightly.
6Cut potatoes lengthwise in half.
7Scoop out inside, leaving thin shell.
8Mash potatoes until no lumps remain.
9Beat in yogurt, onion, salt and pepper until light and fluffy.
10Stir in broccoli and pimentos.
11increase oven temperature to 450!.
12Fill shells with potato mixture.
13Place on ungreased cookie sheet.
14Bake uncovered about 10 minutes or until hot.
154 servings.
16Microwave directions: prick potatoes with fork.
17Place in microwave oven.
18Microwave uncovered on high 7 to 9 minutes, turning potatoes over after 4 minutes, until tender let stand 5 minutes.
19Continue as directed.
20Arrange stuffed potatoes in circle on 10 inch microwavable plate.
