Ingredients:
1 lbsBoneless pork loin
4 tbspOlive oil
1 tbspPrepared mustard
1/2 cupLemon juice
2 Garlic cloves, minced
1 tspOregano, dried
1 cupPlain yogurt
1 Cucumber, peeled and chopped
1/2 tspGarlic, crushed
1/2 tspDill
2 Pita loaves, halved
1 smallRed onion
-- peeled and thinly sliced
Procedures:
1This quick-to-make pita sandwich filled with seasoned stir-fried pork strips will bring the charm of the mediterranean to your dinner table.
2Cut pork crosswise into thin slices.
3Slice them into strips 5 x ?inch.
4Combine olive oil, mustard, lemon juice, garlic and oregano.
5Pour over pork slices.
6Cover and refrigerate for 1-8 hours.
7Meanwhile, in small bowl stir together yogurt, cucumber, garlic and dill.
8Cover and refrigerate.
9Preheat oven to 450 °F.
10Drain marinade from pork slices and place pork in single layer in shallow pan.
11Roast until crisp, about 10 minutes.
12Open each pita half to form a pocket.
13Distribute pork among each half.
14Top each sandwich with some chilled yogurt mixture and sliced onions.
15Preparation time: 15 minutes.
16Cooking time: 10 minutes.
