Ingredients:

| tbsp | Butter or margarine | | 1 1/2
| tsp | Salt | | 1/3
| cup | Chopped celery | | 1/4
| tsp | Pepper | | 1/3
| cup | Chopped onions | | 1
| dash | Paprika | | 4
| cup | Diced peeled potatoes | | 8
| oz | Shredded cheddar cheese | | 3
| cup | Chicken broth | | | Croutons | | 2
| cup | Milk | | | Fresh chopped parsley (opt) |

Procedures:
| 1 | In a large saucepan, melt butter over medium-high heat. | | 2 | Saute celery and onion until tender. | | 3 | Add potatoes and broth. | | 4 | Cover and simmer until potatoes are tender, about 12 minutes. | | 5 | In batches, puree potato mixture in a blender (or food processor). | | 6 | Return to saucepan. | | 7 | Stir in milk and seasonings. | | 8 | Add the cheese and heat only until melted. | | 9 | Top with croutons and garnish with parsley if desired. | | 10 | (recipe from an issue of "country" magazine about a year or two ago. | | 11 | It was the midwest contest winner for darlene alexander of nekoosa, wisconsin). |
