Wisconsin potato cheese soup

Ingredients:
2 tbspButter or margarine
1 1/2 tspSalt
1/3 cupChopped celery
1/4 tspPepper
1/3 cupChopped onions
1 dashPaprika
4 cupDiced peeled potatoes
8 ozShredded cheddar cheese
3 cupChicken broth
Croutons
2 cupMilk
Fresh chopped parsley (opt)
Procedures:
1In a large saucepan, melt butter over medium-high heat.
2Saute celery and onion until tender.
3Add potatoes and broth.
4Cover and simmer until potatoes are tender, about 12 minutes.
5In batches, puree potato mixture in a blender (or food processor).
6Return to saucepan.
7Stir in milk and seasonings.
8Add the cheese and heat only until melted.
9Top with croutons and garnish with parsley if desired.
