Ingredients:
4 medYams, peeled and sliced
1/2 tbspFinely shredded orange peel
1/2 cupOrange juice
1 tbspBrown sugar
1/4 tbspSalt
1/4 tbspCinnamon
1/8 tbspAllspice
Procedures:
1In a large skillet, bring 1" of water to a boil.
2Add yams.
3Cover and simmer for 20 minutes or until they are tender.
4Drain.
5In a small bowl, mix orange peel, orange juice, brown sugar, salt, cinnamon and allspice.
6Pour over yams in skillet.
7Cook and stir until bubbly.
8Simmer, uncovered, for 5 minutes, spooning sauce over potatoes occasionally to make a glaze.
