Zippy cauliflower

Ingredients:
3 cupCauliflower
1 tbspAll purpose flour
1/4 tspSalt
3/4 cupSkim milk
2 tbspChopped green chilies
1/2 tspLow fat margarine
1/8 tspRed (cayenne) pepper
1/8 tspPepper
1/2 cupShredded low fat cheddar ch
1/4 cupFresh bread crumbs
Procedures:
1Preheat oven to 350°F.
2Steam cauliflower just until tender; drain.
3Melt margarine in a medium size saucepan over medium heat.
4In a jar with a lid combine flour, red pepper, salt, pepper, and milk; shake until blended.
5Slowly add to margarine in saucepan, stirring constantly until smooth.
6Add cheese and continue stirring until smooth and slightly thickened.
7Stir in chilies.
8Arrange cauliflower in a 2 quart baking dish; pour sauce over cauliflower, then sprinkle with bread crumbs.
9Bake 10 to 15 min or until bubbling.
