Ingredients:

| | Green zucchini | | 2
| | Yellow zucchini | | 1
| | Red pepper | | 4
| | Green onions | | 1
| | Banana pepper, slivered | | | DRESSING | | 1
| small | Garlic clove, chopped | | 2
| tsp | Dijon mustard | | 1/2
| tsp | Honey | | 2
| tbsp | Wine vinegar | | 1/3
| cup | Olive oil | | | Salt | | | Fresh ground black pepper |

Procedures:
| 1 | With shredder blade of food processor, shred zucchini into long strips or cut by hand. | | 2 | Reserve in bowl. | | 3 | Sliver red pepper and green onions and add to zucchini. | | 4 | Add optional banana pepper for a spicy flavour. | | 5 | In a small bowl whisk together garlic, mustard and honey. | | 6 | Whisk in wine vinegar and olive oil. | | 7 | Mixture should be quite thick. | | 8 | Season with salt and pepper. | | 9 | Just before serving, toss vegetables with vinaigrette. |
