Ingredients:
1 eachMEDIUM ONION, SLICE THINLY
1 tbspVEGETABLE OIL
1 1/2 lbsZUCCHINI, THINLY SLICED
14 1/2 ozWHOLE TOMATOES, CUTUP, DRAIN
2 tbspDICED GREEN CHILES
1 tspSEASONED SALT
3/4 tspGARLIC POWDER, SEASONED
1/2 tspSEASONED PEPPER
4 ozMONTEREY JACK CHEESE, GRATED
Procedures:
1Saute onion in oil, add remaining ingredients except for the cheese.
2Bring to a boil, reduce heat and simmer, uncovered, for 5 to 10 minutes.
3Place zucchini mixture into an 8" square baking dish and top with cheese.
4Bake at 375 deg f. for 10 minutes or until cheese melts.
5Serve as a side dish with other mexican specialties.
