Ingredients:
2 tbspButter or margarine
3 tbspVegetable oil
3 1/2 cupZucchini, coarsely grated
1/4 cupFlour, all-purpose
2 xEggs, lightly beaten
1/2 tspSalt
1/8 tspPepper, black
Procedures:
1In summer, when you"re desperate for a new way to cook the zucchini from your garden, try these.

3Heat the butter and oil together in a 12-inch skillet over moderate heat.
4Meanwhile, quickly mix the zucchini with the flour, eggs, salt and pepper to form a batter.
