Zucchini stuffing casserole

Ingredients:
3/4 cupShredded carrots
1/2 cupOnion, chopped
6 tbspButter
2 1/2 cupHerbed stuffing cubes
1 canCondensed cream of chicken
Soup
1/2 cupSour cream
4 medZucchini, cut 2 inch thick
Procedures:
1Contributed to the echo by: monica pefley zucchini stuffing casserole cook zucchini in a little boiling water until tender.
2Drain.
3Saute carrots and onions in 4 tbsp butter until tender.
4Remove from heat, stir in 1-?cup stuffing cubes, soup, and sour cream.
5Gently stir in zucchini.
6Turn into a casserole dish.
7Melt remaining butter and combine with remaining stuffing cubes.
8Toss lightly and spoon onto top of casserole.
9Bake uncovered 30-40 minutes at 350 degrees.
10Serves 6-8.
