Ingredients:
6 Squash, yellow
3/4 cupCheese, ricotta
4 Onions, green, chopped
1/2 tspParsley
1/2 tspSage, rubbed
1/2 tspThyme leaves
Procedures:
1Preheat oven to 375 degrees.
2Remove and discard stem ends of the squash.
3Slice the squash lengthwise, scoop out seeds and place the halves side-by-side on a baking sheet.
4Combine remaining ingredients in a mixing bowl.
5Fill the hollows in the squash evenly with the cheese mixture.
6Bake 15-20 minutes or until squash is tender.
