| cup | Buttermilk or milk | | 4

Procedures:
| 1 | Basics for new cooks: | | 2 | boiling potatoes: | | 3 | scrub or peel potatoes; place in large pot. | | 4 | Cover with cold water, add salt [about 1 tb for 16 cups of water.] and bay leaf. | | 5 | Bring to boil. | | 6 | Cover and boil for about 20 minutes or until fork-tender. | | 7 | Drain, remove bay leaf and return potatoes to pot over low heat for 30 seconds to evaporate excess moisture. | | 8 | mashed potatoes: | | 9 | in pot, mash together potatoes, buttermilk, butter, salt and pepper until smooth. |
