Ingredients:

| cup | Stock | | 1
| tsp | Chili paste with garlic | | 2
| tbsp | Soy sauce | | 1
| tbsp | Vegetable oil | | | Salt to taste | | 1/2
| tsp | Sugar | | | BEAN CURD | | 2
| tbsp | Oil | | 3
| | Garlic cloves | | 1
| tsp | Fresh ginger | | 3
| | Scallions | | 1
| lbs | Bean curd | | | - cut into 1-inch cubes |

Procedures:
| 1 | Whisk together the sauce ingredients & set aside. | | 2 | In a wok, saute garlic & ginger. | | 3 | Add scallions, followed by the tofu. | | 4 | Cook for a few minutes. | | 5 | Pour suace over the sauted ingredients. | | 6 | Mix gently & simmer carefully. | | 7 | Let the sauce thicken, stirring gently every now & then. | | 8 | Serve over rice. |
