| cup | Low-fat cheddary, grated | | | Cumin, to taste | | | Cayenne, to taste | | | Sour cream or plain yogurt | | | Guacamole (optional) |

Procedures:
| 1 | Drain beans and tomatoes carefully of excess liquid (save for soup). | | 2 | fro each quesadilla, spread ?mixture on a flour tortilla, sprinkle on ?cup grated cheese and pinch of cumin and/or cayenne (if desired). | | 3 | Top with another tortilla. | | 4 | Hea in microwave 2 or 3 minutes, or until cheese is melted. | | 5 | =or= cook on a griddle or nonstick pan; place quesadilla on hot surface for 2 to 3 minutes, turn carefully, and cook an additional 1 or 2 minutes until the cheese is melted. | | 6 | cut into wedges and serve with sour cream or plain yogurt and guacamole if desired. |
