Ingredients:

| | Medium sweet potatoes | | 2/3
| cup | Brown sugar, firmly packed | | 1/4
| cup | Water | | 2
| tbsp | Butter | | 1/4
| cup | Seedless raisins (optional) | | 1/4
| cup | Cognac or other brandy | | 1/2
| cup | Chopped apple (optional) |

Procedures:
| 1 | Wash potatoes; don"t peel. | | 2 | Boil in water (enough to cover potatoes) until barely soft (15 min). | | 3 | Drain, cool, peel. | | 4 | Slice into a greased casserole. | | 5 | Preheat oven to moderate (350 °F). | | 6 | Bring to a boil brown sugar, water, butter, and raisins. | | 7 | Add cognac and pour mixture over potatoes. | | 8 | Bake uncovered, 30 min, basting several times with syrup in casserole. |
