Brandied sweet potatoes

Ingredients:
4 Medium sweet potatoes
2/3 cupBrown sugar, firmly packed
1/4 cupWater
2 tbspButter
1/4 cupSeedless raisins (optional)
1/4 cupCognac or other brandy
1/2 cupChopped apple (optional)
Procedures:
1Wash potatoes; don"t peel.
2Boil in water (enough to cover potatoes) until barely soft (15 min).
3Drain, cool, peel.
4Slice into a greased casserole.
5Preheat oven to moderate (350 °F).
6Bring to a boil brown sugar, water, butter, and raisins.
7Add cognac and pour mixture over potatoes.
8Bake uncovered, 30 min, basting several times with syrup in casserole.
