| cup | Sugar | | 1/4
| cup | Light brown sugar (packed) | | 4
| tbsp | Unsalted butter | | 1 1/2
| tbsp | Vanilla extract | | 1
| x | Juice and grated rind from 1 |

Procedures:
| 1 | In a 1-quart saucepan combine sweet potatoes, water, sugars, 2 tbsp of the butter; the vanilla and lemon juice and rind. | | 2 | Cover and cook over medium heat for 20 minutes, stirring occasionally; uncover and cook until potatoes are fork tender, about 10 minutes. | | 3 | Add the remaining butter, stirring until completely melted. | | 4 | Cook uncovered until sauce is thick, about 2 minutes more. | | 5 | Makes about 1 cup. |
