Ingredients:
1 cupChopped Onion
2 tbspWater
1/2 cupOat bran
1/2 tspSalt
1/8 tspPepper
Clove garlic, minced
1 cupShredded carrots
1 1/2 cupSkim milk
2 tbspSnipped fresh Parsley
1/8 tspGround Nutmeg
1 cupShredded Cheddar cheese *
4 xEgg Whites
Procedures:
1* or monterey jack cheese
2in a large saucepan combine onion, carrots, garlic, and water.
3Bring to boiling, reduce heat.
4Cover and simmer about 10 minutes or till vegetables are tender, stirring occasionally.
5Do not drain.
6Stir in milk, oat bran, parsley, salt, nutmeg, and pepper.
7Bring to boiling over medium-hi heat, stirring constantly.
8Cook and stir for 2 minutes.
9Remove from heat.
10Stir in cheese till melted.
11Cool slightly.
12In a large mixer bowl beat egg whites till stiff peaks form (tips stand straight).
13Fold in vegetable mixture.
14Pour into an ungreased 1 ?qt souffle dish.
15Bake in a 325 deg f oven about 50 minutes or till top is brown and a knife inserted near the center comes out clean.
16Serve immediately.
