Ingredients:
1 lbsLarge carrots
1/3 cupWater
2 tbspFrench dijon mustard
3 Green onions, chopped fine
3 tbspButter
1/4 cupLight brown sugar
2 tbspMinced parsley
Procedures:
1Peel the carrots and cut into thin sliced.
2Place the butter in a 4 cup microwave safe dish.
3Melt 1 minute at high.
4Add the carrots and the water.
5Stir well, cover.
6Microwave 7 minutes at high.
7Stir, then add the remaining ingredients.
8Stir until well mixed.
9Microwave, uncovered, 5 to 7 minutes at medium, stirring 2 or 3 times during the cooking period.
