Ingredients:

| cup | Grits | | 4
| cup | Water | | 2
| | Garlic clove, pressed | | 1/4
| lbs | Butter | | 1/2
| lbs | Cheddar, grated | | 3
| | Egg | | | Salt, to taste | | | Pepper, to taste | | | Parmesan | | | Paprika | | | Jalapeno pepper, (opt) |

Procedures:
| 1 | Cook grits in water seasoned with garlic and salt according to package. | | 2 | Remove from heat. | | 3 | Add butter and stir to dissolve. | | 4 | Add cheddar chese, holding back a good handful to garnish. | | 5 | Now add eggs and mix completely. | | 6 | Salt and pepper to taste. | | 7 | Place in a buttered 2-quart baking pan. | | 8 | Sprinkle remaining cheddar on top. | | 9 | Sprinkle top with a generous amount of parmesan, dust with paprika, garnish with jalapenos and bake, uncovered, in a 300 degree oven for 45 minutes. |
