Hamburgers au poivre

Ingredients:
1 lbsGround Beef
1/2 tbspSalt
1/2 tbspFreshly CrackedBlackPepper, *
1 tbspBrandy Or Cognac, Optional
3 tbspRed Wine, Dry, Optional
Procedures:
1* or to taste.
2Mix meat and salt.
3Shape mixture into 4 patties, each about ?of an inch thick.
4Press pepper into both sides of the patties.
5Cook the patties in a large skillet over medium-high heat, turning once, until the desired doneness is reached, about 8 minutes.
6Drain off the fat.
7Sprinkle the cognac over the patties, immediately ignite, if desired.
8Remove patties to a warm platter.
9Stir the wine into the drippings in the skillet.
10Heat just to boiling, stirring constantly.
11Serve sauce over the patties
