| tbsp | Salt | | 1/2
| tbsp | Freshly CrackedBlackPepper, * | | 1
| tbsp | Brandy Or Cognac, Optional | | 3
| tbsp | Red Wine, Dry, Optional |

Procedures:
| 1 | * or to taste. | | 2 | Mix meat and salt. | | 3 | Shape mixture into 4 patties, each about ?of an inch thick. | | 4 | Press pepper into both sides of the patties. | | 5 | Cook the patties in a large skillet over medium-high heat, turning once, until the desired doneness is reached, about 8 minutes. | | 6 | Drain off the fat. | | 7 | Sprinkle the cognac over the patties, immediately ignite, if desired. | | 8 | Remove patties to a warm platter. | | 9 | Stir the wine into the drippings in the skillet. | | 10 | Heat just to boiling, stirring constantly. | | 11 | Serve sauce over the patties |
