Hamburgers with gorgonzola cheese

Ingredients:
1 1/2 lbsLean ground beef
1/4 lbsGorgonzola or blue cheese
2 tbspButter
2 tbspCognac
1/4 lbsMushrooms, sliced thin
1/2 tspGarlic, minced
2 tbspParsley, chopped
Procedures:
1Place the beefm in a bowl.
2Add the cheese and blend well.
3Divide the mixture into 4 portions and shape into a flat patty, about 1-in.
4Thick or slightly less.
5Heat a skillet, preferably of cast iron.
6Do not add fat.
7When the skillet is very hot, add the patties and cook over moderately high heat 3-4 min. or until well browned on one side.
8Turn and continue cooking about 1-2 min. Meanwhile, heat the butter in a separate skillet and add the mushrooms and garlic.
9Cook, tossing and stirring, about 2 min. or until golden brown.
10Add the cognac to the patties and ignite it.
11Cook until the flame dies.
12Transfer the patties to a warm serving dish or plates.
13Spoon the mushroom mixture over the patties and sprinkle with the chopped parsley.
