Eggplant roma

Ingredients:
4 tspOlive oil
1 largeClove garlic, minced
1/2 cupChopped onion
2 cupPeeled, cubed eggplant
1 1/2 cupPeeled, seeded, chopped
Tomatoes
Salt and pepper
1 1/2 tspBalsamic vinegar
1/4 cupChopped, fresh basil or
4 tspToasted sesame seeds
Procedures:
1In medium skillet, heat olive oil, and saute garlic and onion until onion is translucent, about 5 minutes.
2Stir in eggplant and tomato.
3Sprinkle with salt and pepper.
4Cover and cook over low heat until eggplant is tender, about 10 minutes.
5Stir in vinegar and basil.
6Cook uncovered 5 minutes longer, stirring occasionally.
7Sprinkle with sesame seeds.
8note: 1 teaspoon sesame seeds = 15 calories (1 joker).
9if you can"t find balsamic vinegar, (i hope you can because it is delicious), try malt vinegar or red wine vinegar, or natural rice vinegar.
10Be adventurous.
11There are lots of vinegars out there.
12know your vegetables.
13Choose an eggplant that has a smooth, glossy surface.
14Avoid an eggplant that is dull looking and/or soft.
