Eggplant with yogurt

Ingredients:
1 Large eggplant
4 tbspVegetable oil
3 Large onions, chopped
2 Cloves garlic, crushed
1 tbspFreshly grated ginger
1 tspGround coriander
1/4 tspCayenne pepper
1/2 tspTurmeric
1 tspCumin
1 tspSalt
1 cupOgurt
1/2 tspSugar
Procedures:
1This is a fairly simple eggplant dish made with yogurt.
2If you aren"t crazy about eggplant, you can adapt this to use zucchini or other squash; just watch the cooking times! roast the eggplant in a 350f oven for 1 hour or until tender.
3When cool, peel and cut into cubes.
4Brown the onion in 2 tbsp of the oil.
5Add ginger, garlic, coriander, cayenne, turmeric, cumin and salt.
6Fry for several minutes.
7Add the remaining 2 tbsp oil and the eggplant cubes.
8Cook about 5 minutes.
9Just before serving, stir in the yogurt and sugar.
10Serve with (but not necessarily on) basmati rice.
