Ethiopian ginger vegetables

Ingredients:
5 eachGreen chiles, skin, seed, chop
1 tspFresh ginger, grated
6 eachSmall potatoes, cubed
1/2 lbsGreen beans
4 eachCarrots, cut in strips
Water
2 medOnions, quartered, separated
2 tbspOlive oil
2 clGarlic
Salt and pepper to taste
Procedures:
1Place potatoes, green beans, and carrots into boiling salted water, cover, and cook 5 mins.
2Remove veggies and rinse.
3Saute the chile and onion in oil until soft but not brown.
4Add the ginger, garlic, salt, and pepper and sautee 5 mins.
5Add the rest of ingredients, stir well, and cook over medium heat until veggies are tender.
