Ingredients:
1 smallOnion, Chopped
1 tbspSunflower Oil
1 tspMild Curry Powder or Paste
6 ozMixed veg eg carrot
-courgettes, parsnip, cut
-up small
4 ozBeansprouts
1 tbspChopped Fresh Coriander
Salt and Black Pepper
4 Sheets of Filo Pastry
1 ozButter, Melted
Procedures:
1Fry onion in oil for 2 minutes.
2Add curry powder, stir over heat for 1 minute.
3Add vegetables, stir fry for 3 minutes.
4Add beansprouts, coriander.
5Season.
6Mix, set aside.
7Set oven 190c, 375°F, gas mark Lay out filo sheets.
8Cut in half.
9Brush with butter.
10Place one eigth of filling ner bottom edge of pastry pieces.
11Roll up and tuck in ends to seal.
12Brush with more butter.
13Place on a baking sheet.
14Bake for 20 minutes or until crisp and golden.
