Ingredients:
900 gramsPotatoes, large peeled
50 mlOlive oil
120 mlLemon juice freshly squeezed
2 tspDried oregano
3 Garlic cloves finely chopped
Salt & Pepper
120 mlWater
Procedures:
1Preheat oven to 230c.
2Cut potatoes into quarters or eights lengthwise, place in large shallow ovenproof dish.
3Add remaining ingredients and stir potatoes to coat.
4Bake at top of oven, uncovered for 1 hour or until golden, crip on the outside and soft inside.
5Rearrange the potatoes and add more water during the cooking if necessary
