Ingredients:
2 cupSifted flour
1 1/2 tspSalt
1/4 tspFreshly ground pepper
4 Eggs seperated
12 ozBeer
4 tbspMelted butter
Procedures:
1Fritto misto
2pieces of vegetables, fish, seafood, cheese oil for deep frying
3sift together the flour, salt and pepper.
4Beat the egg yolks until light.
5Add the beer and mix into the dry ingredients, stirring only until well-blended.
6Stir in the butter.
7Let stand at room temperature for 1 ?hours.
8Beat the egg whites until stiff, then fold into the batter.
9Heat the fat to 375°F.
10Dip pieces of vegetables, fish, seafood and cheese into the batter and fry until golden borwn for 2 or 3 minutes.

12almost any vegetable, fish or seafood wil do in one form or another for a mixed fry.
13especially recommended...
14onions/cut into ?inch rings and coat with flour before dipping into the batter.
15eggplant/slice without peeling into half moons or rectangular fingers about ?inch thick.
16Coat with flour before dipping into batter.
17cauliflower/break into flowerets.
18broccoli/peel stems and cut vegetables into bite-size flowerets.
19tomatos/do not peel.
20Cut into ?inch slices.
21Discard the seeds and coat w/flour before dipping into batter.
22cheese/use gruyere, swiss, or fontina cheese cut into 1-inch squares and ?inch thick.
23shrimp/shell and devein raw shrimp, leaving the last segment of the tail intact.
24Wash and dry with paper toweling.
25Dip n flour before dipping into batter.
26crabmeat/select large pieces of lump crabmeat.
27Dust w/flour before dipping into batter.
28oysters/use whole.
29Dust w.flour before dipping into batter.
30lobster or rock lobster tail/cut meat into ?inch medallions.
31Dust w/flour before dipping into batter.
32fish fillets/cut into strips about 1-inch wide.
