Ingredients:

| can | Chick-peas (about 4 cups) | | 4
| large | Garlic cloves | | 2/3
| cup | Olive oil | | 1/2
| cup | Tahini paste | | 1
| tsp | Ground cumin | | 1 1/2
| tsp | Salt, pepper to taste | | 2
| | Lemons (juiced, pits removed) | | 1/4
| tsp | Vitamin C crystals |

Procedures:
| 1 | Drain and rinse chick-peas. | | 2 | Mince garlic in processor first. | | 3 | Then add chick peas, olive oil, tahini, lemon juice, salt, pepper, cumin, and vitamin c. process until mixture is completely smooth. | | 4 | Serve chilled or at room temperature with pita bread or crackers. | | 5 | Garnish with paprika, olives and parsley. | | 6 | Lemon juice may be replaced with ?t. citric acid dissolved in 6 oz. hot water. | | 7 | from the sunny kitchen of matt rosen, white rock, bc. | | 8 | Enjoy!! |
