Ingredients:
1/4 cupUNBLEACHED WHITE FLOUR
1/4 cupOIL
4 eachSHALLOTS (FINELY CHOPPED)
2 eachRIBS CELERY (FINELY CHOPPED)
1 1/2 lbsFRESH MUSHROOMS (CLEANED AND
24 eachFRESH, SHUCKED OYSTERS (IN A
1/2 cupOYSTER LIQUOR (FROM JAR)
1 eachCLOVE GARLIC (FINELY CHOPPED
1 tbspFRESH PARSLEY (CHOPPED)
1/2 tbspBLACK PEPPER
1/2 tbspSALT
1 lbsCHIPS OR CRACKERS
Procedures:
1In a large, heavy skillet, make a roux by heating flour and oil over a medium flame.
2Mix thoroughly and stir constantly.
3Mixture should bubble slowly.
4Let cook a few minutes until light brown.
5Add shallots and celery.
6Cook on a medium flame for about 10 minutes or until celery is soft.
7Add mushrooms, oysters, oyster liquor, and garlic.
8Cook slowly, uncovered, until mushrooms become tender and sauce thickens, about 15 to 20 minutes.
9Add parsley, pepper, and salt.
10Stir well.
11Serve hot with crackers, chips, or raw vegetables.
