Ingredients:

| large | Potatoes | | | X Reserved potato cooking | | | Water | | 3
| | 4 teaspoons fresh garlic | | | Mashed & chopped | | 1/2
| cup | Lemon juice | | 2
| cup | Fat-free mayo |

Procedures:
| 1 | Peel and boil potatoes. | | 2 | Drain (save some of the cooking water), cool, mash with garlic. | | 3 | Mix in lemon juice, then mayo. | | 4 | Mix until well incorporated. | | 5 | Add potato-cooking water as need to thin slightly. | | 6 | Chill before using. | | 7 | Makes just under 3 cups |
