Ingredients:

| lbs | Stale white bread | | 6
| tbsp | Butter | | 3
| cup | Celery, diced | | 2
| tbsp | Onion, chopped | | 1
| tsp | Poultry seasoning | | 2
| tsp | Salt | | 1/4
| tsp | Pepper | | 1
| cup | Broth from cooking giblets | | | Or | | 1
| cup | Milk |

Procedures:
| 1 | Pull bread into small pieces; use crumbs and crusts; there should be about 6 cups of coarse crumbs. | | 2 | Melt butter in large saucepan. | | 3 | Add celery and onion, and cook with frequent stirring until soft and yellow. | | 4 | Add bread and seasonings and toss together until well mixed. | | 5 | Cool. | | 6 | Add the liquid, mix lightly with a fork and stuff lightly into the dressed chicken. | | 7 | Makes enough for a 4-lb chicken. |
