Pasta salad with creamy ginger dressing

Ingredients:
1 lbsPrecooked shanghai noodles
1/2 lbsSnow peas
2 tbspCoriander, chopped
1 tbspOil
1 tspSalt
1/2 tspChinese cooking wine
3 tbspFresh ginger, grated
1 Egg yolk
2 tspLemon juice
1 1/2 tspSoy sauce
1 tbspCream
1 Dash sesame oil for noodles
1/2 lbsShrimp, shelled deveined
2 tbspScallions, minced
SHRIMP MARINADE
1/4 tspWhite pepper
DRESSING
1 Small garlic clove, crushed
1 tspEgg white
2/3 cupVegetable oil (not olive)
2 1/2 tbspSesame oil
Procedures:
1Mix the marinade ingredients in a small bowl and add shrimp.
2Blanch the noodles, rinse under cool water and sprinkle with sesame seed oil, toss, and set aside.
3(you may want to trim noodles with scissors to about 4 inches in length, to make serving easier).
4Blanch whole snow peas and set aside.
5Heat wok, add 1 tablespoon oil, when oil is hot, add shrimp and stir-fry until pink.
6Set aside.
7Dressing: in a blender or food processor, mix ginger, garlic, egg yolk, egg white, and lemon.
8Slowly drizzle in oil.
9Mix in soy and cream.
10Set aside.
11Toss noodles, shrimps, and snow peas.
12Mix in dressing to tastee.
13Garnish with scallions and coriander.
14Serve at room temperature.
