1989 3rd place: cinnamon toffee bars

Ingredients:
1 cupUnsalted butter, softened
1 cupPacked brown sugar
1 Egg
1 tbspVanilla
2 tbspGround cinnamon
1/2 tspSalt
2 cupAll-purpose flour
1 Egg white, beaten

6 tbspButter, cold
3/4 cupAll-purpose flour
3/4 cupSugar
Colored sugar for garnish
Procedures:
1Preparation time: 15 minutes baking time: 20 to 25 minutes
2Heat oven to 375 degrees.
3Grease 15- by 10-inch jelly-roll pan.
4Cream butter, sugar, egg and vanilla in mixing bowl.
5Stir in cinnamon and salt.
6Add flour, a little at a time.
7Blend well.
8Press into pan to ?-inch thickness with wax paper.
9Brush beaten egg white over dough.
10Combine streusel ingredients in food processor.
11Process until butter is evenly blended.
12Sprinkle streusel over dough.
13Bake 20 minutes.
14Cool on wire rack 15 minutes.
15Cut into 2- by 1 ?-inch bars while still warm.
16Note: the test kitchen found that a mixture of ground spices such as cinnamon, allspice, ginger, cardamom and cloves also works nicely in place of the cinnamon, and for the holiday season, a sprinkling of colored sugar before baking brightens up these cookies.
