| 1 | Preparation time: 15 minutes baking time: 20 to 25 minutes |
| 2 | Heat oven to 375 degrees. |
| 3 | Grease 15- by 10-inch jelly-roll pan. |
| 4 | Cream butter, sugar, egg and vanilla in mixing bowl. |
| 5 | Stir in cinnamon and salt. |
| 6 | Add flour, a little at a time. |
| 7 | Blend well. |
| 8 | Press into pan to ?-inch thickness with wax paper. |
| 9 | Brush beaten egg white over dough. |
| 10 | Combine streusel ingredients in food processor. |
| 11 | Process until butter is evenly blended. |
| 12 | Sprinkle streusel over dough. |
| 13 | Bake 20 minutes. |
| 14 | Cool on wire rack 15 minutes. |
| 15 | Cut into 2- by 1 ?-inch bars while still warm. |
| 16 | Note: the test kitchen found that a mixture of ground spices such as cinnamon, allspice, ginger, cardamom and cloves also works nicely in place of the cinnamon, and for the holiday season, a sprinkling of colored sugar before baking brightens up these cookies. |
