Ingredients:

1 cupButter-flavored shortening
1 cupGranulated sugar
1 cupFirmly packed brown sugar
2 Eggs
1 tspVanilla
1 1/2 cupPlus 1 tb sifted all-purpose
-flour, divided
1 tspBaking soda
3/4 tspSalt
2 1/2 cupOld-fashioned or:
2 1/2 cupQuick-cooking oatmeal
-uncooked
1 cupFinely chopped hazelnuts
1 cupFinely diced dried apricots
1 cupWhite chocolate chips
Procedures:

2preheat oven to 350 degrees.
3In large bowl, mix shortening, the sugars, eggs and vanilla.
4Beat at medium speed with an electric mixer until well-blended.
5combine 1 ?cups of flour, baking soda and salt.
6Stir into the shortening mixture.
7Stir in oatmeal.
8Stir in nuts.
9toss apricots with remaining 1 tablespoon flour.
10Stir into dough.
11Stir in white chocolate chips.
12shape dough into 1 ?inch balls.
13Flatten slightly and place 2 inches apart on ungreased baking sheets.
14bake 11 to 13 minutes until slightly moist in the center and just beginning to brown around the edges.
15Remove immediately to wax-paper-covered paper towels.
16makes 3 dozen
