Apple pie bars

Ingredients:

CRUMB TOPPING
3/4 cupAll-purpose flour, unsifted 5 tb Butter
1/3 cupSugar
BARS
2 cupPlus 3 T. all-purpose flour, 1 c Cheddar cheese, grated
-unsifted 1 ts Lemon rind, grated
1/4 tspSalt ?ts Ground cinnamon
3/4 cupButter (1-?sticks), ?ts Ground nutmeg
-softened 5 c Assorted apples, peeled
1/2 cupSugar -cored, and grated
1 largeEgg, lightly beaten 1 tb Fresh lemon juice
1 tspVanilla extract
Procedures:
1Heat oven to 425 °F.
2Grease a 13 x 9-inch baking pan.
3Prepare crumb topping; set aside.
4In small bowl, combine 2 cups flour and the salt; set aside.
5In large bowl, with electric mixer on medium speed, beat butter and ?cup sugar until combined.
6Add egg and beat until smooth.
7Stir in vanilla.
8Gradually add flour mixture to butter mixture until soft dough forms.
9With fingers, press dough evenly into greased pan.
10In large bowl, combine cheese, remaining ?cup sugar, remaining 3 tablespoons flour, the lemon rind, cinnamon, and nutmeg.
11Fold in apples and lemon juice.
12Spoon apple mixture over dough in pan.
13Sprinkle crumb topping evenly over apple mixture.
14Bake 25 to 30 minutes or until golden.
15Cool completely on wire rack--at least 40 minutes.
16Refrigerate until ready to serve, then cut into bars.
17Crumb topping: in medium-size bowl, combine ?cup unsifted all-purpose flour and 1/3 cup sugar.
18With pastry blender or 2 knives, cut in 5 tablespoons butter until mixture resembles coarse crumbs.
