The Homemade bratwurst is the name of the recipe.
Ingredients:

3 ea ft small ( 1 inch) hog ca
1 1/2 lbsLean pork butt , cubed
1 lbsVeal , cubed
1/2 lbsPork fat , cubed
1/4 tspGround allspice
1/2 tspCrushed caraway seeds
1/2 tspDried marjoram
1 tspFreshly ground white pepper
1 tspSalt , or to taste
Procedures:
Step one:1) soak and prepare the casings.
Step two:2) grind the pork , veal and fat separately through the fine blade of the meat grinder.
Step three:3) mix the meats together and grind again.
Step four:4) add remaining ingredients and mix thoroughly.
Step five:5) stuff the mixture into casings and twist off into 4 to 5 inch lengths.
Step six:Note : these are fresh ( uncured) and should be kept refrigerated no longer than two days.
Step seven:Note : can be grilled or pan fried
